Abstract

PURPOSE:To readily obtain a fluorentine confectionery with uniform baking without generating wastes at a low cost, by tying in a previously prepared and shaped upper dough of the florentine confectionery on a biscuit as a base thereof, placing the resultant pieces in an oven and baking the pieces one by one. CONSTITUTION:A previously prepared and shaped upper dough 1 (which may be taffy, candy, etc.) (in a molten state) of a florentine confectionery is placed on a base (lower part) 2 of the florentine confectionery (e.g. biscuit or Japanese cracker) and the resultant pieces are placed in an oven and baked one by one to provide the aimed florentine confectionery. Since the confectionery is baked one by one as opposed to a conventional method for collectively baking the dough in a large mold at a time and cutting the baked dough, cutting is not required and hand making elements are added and labor for baking the dough twice is simultaneously omitted. This method can also be utilized for a base, such as bread.
