Abstract

PURPOSE:To improve sorting, preservation, processing and increase in nutritive value and taste and obtain the aimed preserved food, by dipping unhulled rice in flowing water, warming the unhulled rice, boiling the rice, grinding the rice into the form of rolled barley, separating and sorting chaff and grain seeds. CONSTITUTION:Unhulled rice grains are dipped in flowing water for about 3-4 days and warmed in a hermetically sealed container at about 38 deg.C for 2-3 days to provide a lightly germinated state. The resultant grains are boiled at a low temperature for 30-35min, ground into the form of rolled barley, separated and sorted into chaff and grain seeds to afford the aimed preserved food.
