Abstract
PURPOSE:To obtain a modified fat and oil having lowered melting point while maintaining the flavor, by carrying out ester interchange reaction of a mixture of an animal fat and oil and a vegetable oil with a PEG-modified lipase. CONSTITUTION:An unreacted fat and oil is produced by mixing an animal fat and oil which is solid at normal temperature (e.g. lard or tallow) and a vegetable fat and oil (e.g. corn oil). A PEG(polyethylene glycol)-modified lipase is prepared in an amount of 0.5-2% based on the above fats and oils and is added with equal amount of water to promote the activity of the PEG- modified lipase. Said pretreated enzyme is added with a dehydrated and mixed fats and oils and the mixture is subjected to ester interchange reaction for 24-72hr to obtain a triglyceride. The ester interchange reaction is carried out by substituting the air in the reaction vessel with dried nitrogen.
