Claims (7)
- 보리, 밀 및 맥아를 사용하지 않고, 탄소원을 함유하는 시럽, 질소원, 홉, 색소, 거품의 발생·거품의 품질을 개선하는 원재료 및 물을 원료로 하여 발효전 액을 제조하고, 상기 발효전 액을 효모를 사용하여 발효시킴으로써 보리, 밀 및 맥아를 사용하지 않는 발포 알코올 음료의 제조방법으로서, 단백질 분해효소를 원재료의 일부로서 사용하는 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 1항에 있어서,상기 단백질 분해효소는, 엔도형 프로테아제 또는 엔도형 프로테아제 활성을 갖는 단백질 분해효소인 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 1항 또는 제 2항에 있어서,상기 단백질 분해효소는, 상기 효소의 기질로서 작용하는 질소원으로서의 원재료와 함께 사입공정에서 첨가하여, 효소반응을 실시하는 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 3항에 있어서,상기 사입공정에서, 수산화나트륨을 12.8 내지 51.2mM가 되도록 더욱 첨가하는 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 3항 또는 제 4항에 있어서,상기 효소반응은, 상기 기질이 5 내지 10배의 농축률로 사용되고, 상기 단백질 분해효소가 상기 기질에 대하여 상기 기질당 0.5 내지 2%의 사용률로 사용되는 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 5항에 있어서,상기 효소반응의 조건은, 반응온도가 70 내지 90℃이며, 반응시간이 30 내지 60분인 것을 특징으로 하는 발포 알코올 음료의 제조방법.
- 제 1항 내지 제 6항 중 어느 한 항에 기재된 발포 알코올 음료의 제조방법에 의해 얻어지는 발포 알코올 음료.
