Abstract
본 발명의 율무를 함유한 기능성 국수 및 그 제조방법은,
국수 제조를 위해서 국수의 주성분인 밀가루나 곡분 94~99.9wt%와, 10~100메쉬 크기의 율무 분말 0.1~6wt%를 반죽기에 투입하여 혼합하여서 국수제조용 혼합물을 제조하는 단계와;
20~40℃로 가열된 정제수 95~99wt%에 정제염 1~5wt%를 투입하여 혼합하여서 염수를 제조하는 단계와;
반죽기에 상기 1단계에서 제조된 국수제조용 혼합물 55~80wt%와, 상기 2단계에서 제조된 염수 20~45wt%를 투입한 후, 반죽기 내의 진공도를 300~700㎜Hg(60~460Torr)로 유지하면서 진공반죽을 실시하여 국수용 반죽물을 제조하는 단계와;
상기 3단계에서 제조된 국수용 반죽물을, 제면기의 압연롤러에 통과시켜 소정 두께의 면대를 제조하는 단계와;
상기 단계에서 제조된 면대를, 제면기의 압연롤러 말단에 설치된 절출기를 이용하여, 면대를 원하는 규격으로 잘라 면발을 제조하는 단계; 및
상기 단계에서 제조된 면발을, 건조봉에 걸어 건조실 내에서 건조하고, 건조 후 원하는 규격으로 잘라 포장하는 단계를 포함하는 것이다.
그러므로 본 발명의 기능성 국수는, 일반수요자가 본 발명의 기능성 국수를 먹으면서 자연스럽게 인체 유익한 율무 성분을 함께 섭취할 수 있으므로 인체 건강에 매우 유익할 뿐만 아니라, 국수의 식감 개선과 국수 선호도를 높일 수 있는 것이다.

Claims (1)
- 국수 제조를 위해서 국수의 주성분인 밀가루나 곡분 94~99.9wt%와, 10~100메쉬 크기의 율무 분말 0.1~6wt%를 반죽기에 투입하여 혼합하여서 국수제조용 혼합물을 제조하는 단계와;
20~40℃로 가열된 정제수 95~99wt%에 정제염 1~5wt%를 투입하여 혼합하여서 염수를 제조하는 단계와;
반죽기에 상기 1단계에서 제조된 국수제조용 혼합물 55~80wt%와, 상기 2단계에서 제조된 염수 20~45wt%를 투입한 후, 반죽기 내의 진공도를 300~700㎜Hg(60~460Torr)로 유지하면서 진공반죽을 실시하여 국수용 반죽물을 제조하는 단계와;
