Abstract
본 발명에서 유산균의 동결보호를 위해 사용하는 알지네이트 비드와 콩가루는 유산균 조성물을 제조함에 있어서 균체의 보호 효과가 종래의 동결보호제를 사용한 경우에 비해 매우 뛰어날 뿐만 아니라, 식품첨가등급의 재료로서 안전성을 제공해 준다. 따라서, 본 발명에 따른 유산균 조성물은 미생물의 생존율을 극대화시켜 유산균을 식품, 의약, 사료, 발효용 첨가제 등으로 활용함에 있어서 제품의 품질 및 유통기간을 증진시키며, 유산균을 낮은 단가로 공급할 수 있게 한다.

도 2는 동결보호제로서 사용된 콩가루의 농도에 따른 유산균의 생존율을 비교한 그래프이다.
도 3은 Lactobacillus brevis A101에 대해 증류수만 사용한 무처리 대조군, 동결보호제로서 콩가루를 사용한 군, 알지네이트 비드에 Lactobacillus brevis A101를 포집한 군, 알지네이트 비드에 Lactobacillus brevis A101를 포집한 후 콩가루 수용액에 침지한 군의 온도에 따른 Lactobacillus brevis A101의 생존율을 비교한 그래프이다.
도 4는 Lactococcus lactis CHJ10에 대해 증류수만 사용한 무처리 대조군, 동결보호제로서 콩가루를 사용한 군, 알지네이트 비드에 Lactococcus lactis CHJ10를 포집한 군, 알지네이트 비드에 Lactococcus lactis CHJ10를 포집한 후 콩가루 수용액에 침지한 군의 온도에 따른 Lactococcus lactis CHJ10의 생존율을 비교한 그래프이다.

Claims (15)
- 유산균이 포집되어 있는 알지네이트 비드 및 동결보호제로서 콩가루를 포함하는 유산균 조성물.
- 제1항에 있어서,
상기 조성물은 당류, 아미노산, 펩타이드, 젤라틴, 글리세롤, 당알콜, 유청, 알긴산, 아스코르빈산, 효모 추출물, 탈지유, 트레할로스 및 마늘 추출물로부터 선택되는 하나 이상의 추가의 동결보호제를 더 포함하는 유산균 조성물.
- 제1항에 있어서,
상기 유산균은 김치 유래의 유산균인 유산균 조성물.
- 제1항에 있어서,
상기 유산균은 Lactobacillus 속, Lactococcus속, Weissella 속, Streptococcus 속, Enterococcus속, Bifidobacterium 속, Leuconostoc 속 및 Pediococcus 속으로 이루어지는 군으로부터 선택되는 1종 이상의 유산균인 유산균 조성물.
- 제1항에 있어서,
상기 유산균은 Lactobacillus brevis, Lactococcus lactis , Weissella cibaria, Weissella koreensis, Lactobacillus acidophilus , Lactobacillus bulgaricus, Lactobacillus casei , Lactobacillus plantarum , Lactobacillus rhamnosus , Lactobacillus salivarius, Leuconostoc mesenteroides , Leuconostoc citreum , Streptococcus thermophilus, Enterococcus faecium , Enterococcus faecalis , Bifidobacterium bifidum, Bifidobacterium breve , Bifidobacterium longum , Bifidobacterium animalis 및 Pediococcus pentosaceus로 이루어진 군으로부터 선택되는 1종 이상의 유산균인 유산균 조성물.
- 제1항에 있어서,
상기 유산균이 포집되어 있는 알지네이트 비드는 콩가루 수용액에 침지되어 있는 것인 유산균 조성물.
- 제1항에 있어서,
상기 조성물은 동결된 형태 또는 동결건조된 분말의 형태인 유산균 조성물.
- 유산균이 포집되어 있는 알지네이트 비드 및 동결보호제로서의 콩가루의 혼합물을 동결 또는 동결건조하는 것을 포함하는 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물의 제조방법.
- 제8항에 있어서,
상기 혼합물은 유산균이 포집되어 있는 알지네이트 비드를 콩가루 수용액에 침지하여 얻어지는 것인 유산균 조성물의 제조방법.
- 동결 형태의 유산균 제제 또는 동결건조 유산균 분말 제제의 제조에 있어서, 유산균이 포집되어 있는 알지네이트 비드에 대해 동결보호제로서 콩가루를 첨가하여 동결 또는 동결건조하는 것을 포함하는 유산균의 동결 보호 방법.
- 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물을 포함하는 식품.
- 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물을 포함하는 건강기능식품.
- 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물을 포함하는 의약.
- 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물을 포함하는 사료.
- 제1항 내지 제7항 중 어느 한 항에 따른 유산균 조성물을 포함하는 발효용 첨가제.
