(해결 수단) 바닐라 추출액을, pH 5 ∼ pH 12 로 조정한 후, 100 ℃ ∼ 180 ℃ 에서 10 분 ∼ 10 시간 가열 처리하는 것을 특징으로 하는 가열 처리 바닐라 엑기스의 제조 방법.

Claims (9)
- 바닐라 추출액을, pH 5 ∼ pH 12 로 조정한 후, 100 ℃ ∼ 180 ℃ 에서 10 분 ∼ 10 시간 가열 처리하는 것을 특징으로 하는 가열 처리 바닐라 엑기스의 제조 방법.
- 제 1 항에 있어서,
바닐라 추출액이 물 및 알코올을 함유하는 것인 가열 처리 바닐라 엑기스의 제조 방법. - 제 2 항에 있어서,
알코올이 에탄올, 프로필렌글리콜 및 글리세린으로 이루어지는 군에서 선택되는 1 종 또는 2 종 이상인 가열 처리 바닐라 엑기스의 제조 방법. - 제 1 항 내지 제 3 항 중 어느 한 항에 있어서,
바닐라 추출액이, 바닐라콩의 물 및 알코올의 혼합 용매에 의한 추출액 또는 그 농축액인 가열 처리 바닐라 엑기스의 제조 방법. - 제 1 항 내지 제 3 항 중 어느 한 항에 있어서,
바닐라 추출액이, 당류가 첨가된 것인 가열 처리 바닐라 엑기스의 제조 방법. - 제 5 항에 있어서,
당류가 단당, 이당 및 올리고당으로 이루어지는 군에서 선택되는 1 종 또는 2 종 이상인 가열 처리 바닐라 엑기스의 제조 방법. - 제 1 항 내지 제 3 항 중 어느 한 항에 있어서,
바닐라 추출액이, 아미노산이 첨가된 것인 가열 처리 바닐라 엑기스의 제조 방법. - 제 1 항 내지 제 3 항 중 어느 한 항에 있어서,
바닐라 추출액이 효소 처리된 것인 가열 처리 바닐라 엑기스의 제조 방법. - 제 1 항 내지 제 3 항 중 어느 한 항에 기재된 방법에 의해 얻어지는 가열 처리 바닐라 엑기스를 음식품에 첨가하는 것을 특징으로 하는, 음식품의 향미 개선 방법.
