Claims (4)
- 각종 양념을 혼합하여 양념장을 제조하는 양념장 제조단계;
물과 건표고버섯, 무 및 다시마를 넣고 가열하여 야채육수를 제조하는 단계;
다진 소고기 100중량부에 대하여 상기 양념장 8~13중량부를 혼합한 다음 솥에 넣어 볶는 소고기 볶음 제조단계;
상기 볶은 소고기에 배즙을 첨가하고 저어주면서 볶음 소고기를 잘게 풀어주는 단계; 및
상기 볶음 소고기와 야채육수, 매실청 및 고추장을 혼합한 다음 솥에서 교반하면서 미리 정해진 농도가 될 때까지 가열함으로써 볶음 고추장을 완성하는 고추장 제조단계를 포함하는 것을 특징으로 하는 매실청을 첨가한 볶음 고추장의 제조방법.
- 제1항에 있어서, 상기 양념장은 전체조성물 100중량부에 대하여 간장 5~7중량부, 다진 파 47~50중량부, 다진 마늘 10~13중량부, 다진 생강 5~7중량부, 파인애플 33~37중량부, 깨소금 55~60중량부, 참기름 5~7중량부, 설탕 15~10중량부, 배즙 15~10중량부, 정종 50~55중량부, 후추 1~4중량부가 혼합되는 것을 특징으로 하는 매실청을 첨가한 볶음 고추장의 제조방법.
- 제1항에 있어서, 상기 야채육수는 물 100중량부에 대하여 건표고버섯 3~5중량부, 무 50~70중량부 및 다시마 1~5중량부를 넣고 20~25분간 가열하는 것을 특징으로 하는 매실청을 첨가한 볶음 고추장의 제조방법.
- 제1항에 있어서, 상기 고추장 제조단계는 고추장 75~80중량%와 볶음 소고기 10~12중량%, 야채육수 6~9중량%, 매실청 1~3중량%가 투입되는 것을 특징으로 하는 매실청을 첨가한 볶음 고추장의 제조방법.
