Abstract
Description
도 2에서 control wo는 효소변형전분을 포함하지 않은 유중 수적형 에멀젼을 나타낸다. 도 2에서 MCS 20 wo는 효소변형전분 젤을 수상부분의 중량대비 20% 포함한 유중 수적형 에멀젼을 나타낸다. 도 1에서 MCS gel은 효소변형전분 젤을 나타낸다.
도 3은 전계방출형 주사전자현미경(FE-SEM)으로 관찰한 '유중 수적형 젤 내부에서 분리, 건조된 효소변형 전분 젤 입자'의 이미지이다.
도 4는 건조된 효소변형 전분 젤 입자를 X선 분광분석기(EDS)로 성분분석한 결과 그래프이다.
Claims (10)
- 옥수수전분 페이스트에 4-α-글루카노트랜스퍼레이즈 (4-α-glucanotransferase)를 처리하여 옥수수변형전분을 제조하는 단계 (A);
상기 단계 (A)로부터 제조된 옥수수변형전분을 침전시키고, 침전물을 수득한 후, 건조시켜 건조된 옥수수변형전분을 수득하는 단계 (B);
상기 단계 (B)에서 수득된 건조 옥수수변형전분을 완충액에 현탁시킨 후, 오일 및 유화제를 첨가하여 균질화시킴으로써 유중 수적형 에멀젼을 제조하는 단계 (C); 및
상기 단계 (C) 후, 오일 연속상에 존재하는 수상입자인 옥수수변형전분을 젤화시키기 위하여, 상기 유중 수적형 에멀젼을 냉각시키는 단계 (D)를 포함하는 것을 특징으로 하는 나노-마이크로 옥수수전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 (A) 단계는,
고형분 함량 1~10 wt.%의 옥수수전분 페이스트에 4-α-글루카노트랜스퍼레이즈 (4-α-glucanotransferase)를 1~10 U/g의 농도로 처리한 후, 60~80℃에서 60~80시간 반응시키는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 4-α-글루카노트랜스퍼레이즈 (4-α-glucanotransferase)는,
터머스 아쿠아티쿠스 (Thermus aquaticus)로부터 유래한 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 (B) 단계는,
옥수수변형전분에 92~98 중량% 에탄올 수용액을 가해 침전시키고, 5,000~7,000 rpm에서 10~30분 동안 원심분리하여 침전물을 분리해 낸 후, 이를 상온에서 건조시키고, 50~150 mesh 체에 내려 옥수수변형전분을 수득하는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 (C) 단계는,
pH 6.0~8.0인 1~10mM 나트륨 인산 완충제 (sodium phosphate buffer)에 옥수수변형전분을 10~30 중량% 농도로 현탁하여 수상부분을 제조하고, 이를 유화제가 5~10 중량%로 분산된 오일에 투입한 후, 10,000~18,000 rpm에서 1~3분 동안 균질화함으로써 수행되는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제5항에 있어서,
상기 수상부분 및 오일은,
수상부분 : 오일의 비율이 3~5 : 7~3인 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 나노-마이크로 전분 젤 입자의 제조방법은,
상기 단계 (C)와 (D)의 사이에, 상기 단계 (C)에서 제조한 에멀젼에 5,000~15,000 psi의 압력을 가하여 균일한 크기를 갖도록 제조하는 과정을 추가로 포함하는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 (D) 단계의 냉각은,
0~10℃에서 1~3시간 동안 수행하는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제1항에 있어서,
상기 (D) 단계 후,
유중 수적형 에멀젼에 에탄올 수용액을 가해 젤 입자를 침전시킨 후, 여과하여 나노-마이크로 전분 젤 입자를 수득하는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법. - 제9항에 있어서,
상기 전분 젤 입자는,
유중 수적형 에멀젼 2~8 g에 유중 수적형 에멀젼 중량 대비 3~7배의 92~98 중량% 에탄올 수용액을 소량씩 가하여 젤 입자를 침전시키는 것을 특징으로 하는 나노-마이크로 전분 젤 입자의 제조방법.
