- (a) 연잎, 연자방, 연근, 연줄기 및 연자를 수세한 다음 세절하여 원료를 준비하는 단계와; (b) 상기 (a)단계에서 준비한 연잎 또는 연자방을 덖어내어 덖은 연잎 또는 연자방에 정제수를 첨가하여 연잎 또는 연자방 추출물을 수득하는 단계와; (c) 상기 (a)단계에서 준비한 연근에 황백당을 첨가하여 1, 2차 숙성한 다음 여과하여 연근 당 추출물을 수득하는 단계와; (d) 상기 (a)단계에서 준비한 연근에 중량대비 15중량% 엿기름를 첨가하여 효소 처리한 다음 여과하여 효소 처리된 연근 추출물을 수득하는 단계와; (e) 상기 (a)단계에서 준비한 연근, 연줄기 또는 연자에 유산균을 접종하여 발효한 다음 여과하여 연근, 연줄기 또는 연자 유산균 발효 추출물을 수득하는 단계와; (f) 상기 (b),(c),(d) 및 (e)단계에서 수득한 각 추출물 중 선택되는 어느 하나 이상에 올리고당, 과당 및 구연산나트륨으로 이루어진 첨가물을 배합하여 용기에 충진한 후 밀봉상태에서 살균한 다음 포장하는 것을 특징으로 하는 연 음료 제조방법.
- 제 1항에 있어서, 상기 (b)단계 연잎 추출물 79.60 ~ 81.17중량%, (c)단계 연근 당 추출물 9.80 ~ 10.20중량%, (d)단계 유산균 발효 연줄기 추출물 4.50 ~ 5.00중량%, 유산균 발효 연자 추출물 4.50 ~ 5.00중량% 및 올리고당, 과당, 구연산나트륨을 포함하는 첨가물 0.03 ~ 0.20중량% 배합된 것을 특징으로 하는 연 음료 제조방법.
- 제 1항에 있어서, 상기 (e)단계 유산균은 Lactobacillus brevis 종균주, Leuconostoc paramesenteroides 종 균주 중에서 선택되는 어느 하나인 것을 특징으로 하는 연 음료 제조방법.
- 1항 내지 제 3항 중 어느 하나의 방법에 따라 제조된 연 음료.
