Claims (3)
- (a) 락토바실러스 플란타룸 PMO 08(Lactobacillus plantarum PMO 08) 균주를 접종하여 채소발효의 활성을 촉진시킬 수 있는 배양액을 제조하는 전배양 단계;
(b) 십자화과 유기농 채소 5종 및 프락토올리고당, 아가베시럽을 분쇄 및 혼합하여 혼합액을 제조하고, 여기에 상기 (a) 단계의 배양액을 혼합하는 단계;
(c) 상기 (a) 단계의 배양액이 혼합된 혼합액을 발효시키는 단계를 포함하는 방법으로 제조된, 펜에틸 이소티오시아네이트(PEITC)의 함량을 강화시킨 채소 발효조성물.
- 제1항에 있어서, 상기 (a) 단계의 균주는 0.1% 내지 1% 농도로 접종되며, 상기 (b) 단계의 유기농 채소 5종은 케일, 명일엽, 양배추, 돌미나리, 브로콜리를 이용하고, 프락토올리고당은 1 내지 5 중량%, 아가베시럽은 5 내지 10 중량%를 포함하며, 배양액의 농도는 0.01% 내지 0.1% 농도로 혼합하고, 상기 (c) 단계의 발효는 25℃ 내지 35℃에서 24 내지 30시간 동안 수행하는 것을 특징으로 하는 발효조성물.
- 제1항의 발효조성물을 유효성분으로 포함하는 식품 조성물.
