Claims (6)
- 아로니아 열매를 아로니아 분쇄물로 만드는 단계;
상기 아로니아 분쇄물에 발효제를 첨가하여 아로니아 발효물을 만드는 단계; 및
상기 아로니아 발효물을 착즙하여 아로니아 와인을 만드는 단계; 를 포함하는 아로니아 와인 제조방법. - 제1항에 있어서,
상기 아로니아 열매를 아로니아 분쇄물로 만드는 단계는,
상기 아로니아 분쇄물에 산도 보정액을 첨가하여 상기 아로니아 분쇄물의 산도를 pH 3.5 이상 ~ pH 3.8 이하로 보정하는 단계; 를 포함하는 아로니아 와인 제조방법. - 제2항에 있어서,
상기 발효제는 상기 아로니아 분쇄물의 2.0 이상 ~ 4.0 중량(wt)% 이하의 효모(K1V-1116)을 사용하고, 상기 아로니아 발효물은 20℃ 이상 ~ 25℃ 이하로 10일 이상 ~ 20일 이하로 발효되는 아로니아 와인 제조방법. - 제1항에 있어서,
상기 아로니아 와인을 만드는 단계는,
상기 아로니아 발효물을 착즙한 후,
상기 착즙된 아로니아 발효물에 단백질 성분을 포함하는 여과제를 첨가하여 아로니아 여과액을 만드는 단계; 및
상기 아로니아 여과액에 아로니아청을 상기 아로니아 여과액의 2 이상 ~ 10 중량(wt)% 이하로 첨가하고, 5℃ 이상 ~ 25℃ 이하에서 숙성시켜 상기 아로니아 와인을 만드는 단계; 를 포함하는 아로니아 와인 제조방법. - 제4항에 있어서,
상기 아로니아청은 상기 아로니아 열매와 설탕이 5:4로 혼합되며, 25일 이상 ~ 30일 이하로 숙성되는 아로니아 와인 제조방법. - 제1항 내지 제5항 중 어느 한항의 제조방법에 의해 만들어진 아로니아 와인.
