Abstract
본 발명에 따른 국수용 육개장 양념소스는 고사리의 식이섬유소, 토란대에 함유된 갈락탄과 뮤신 성분 및 알긴산 성분이 조합되어 국수의 과다 섭취로 인한 성인병 발병을 억제하며, 알긴산 성분이 면발 표면에 고착되어 면발의 가루입자가 국물에 용출되는 것을 줄여주므로 가루입자에 의해 양념소스 본래의 맛과 향이 저하되는 것을 방지하고 면발의 씹는 식감을 좋게 하여 국수 요리의 풍미와 식감이 우수하며, 또한 양념소스 재료들의 가열을 최소화한 액상타입이므로 재료 본래의 영양성분과 풍미가 보존되고 한국인의 입맛에 친숙한 육개장의 맛과 향을 나타내므로 국수 면발의 종류에 관계없이 조화를 이루어 소비자의 선호도가 높은 장점을 가진다.

Claims (7)
- 고사리, 토란대 또는 이들 모두를 데친 다음 절단하는 단계;
다진 육을 익히는 단계;
양념 93~97 중량%와 알긴산 3~7 중량%를 혼합하여 알긴산을 포함하는 양념을 준비하는 단계; 및
물 100 중량부에 상기 절단한 고사리, 토란대 또는 이들의 혼합물 10~20 중량부, 상기 익힌 다진 육 5~15 중량부 및 상기 알긴산을 포함하는 양념 20~30 중량부를 혼합하는 단계;를 포함하는 국수용 육개장 양념소스의 제조방법. - 청구항 1에 있어서,
상기 절단하는 단계는 물 100 중량부에 쌀 3~7 중량부를 첨가하여 끓인 후 여기에 고사리, 토란대 또는 이들 모두를 넣고 1~3 분간 데친 다음 건져내어 절단하는 것을 특징으로 하는 국수용 육개장 양념소스의 제조방법. - 청구항 1에 있어서,
상기 절단하는 단계는 데친 고사리, 토란대 또는 이들 모두를 알루미늄 포일로 감싸서 열풍건조한 후 절단하는 것을 특징으로 하는 국수용 육개장 양념소스의 제조방법. - 청구항 3에 있어서,
상기 데친 고사리, 토란대 또는 이들 모두를 천으로 감싸고 그 외부를 알루미늄 포일로 감싼 다음 열풍건조하는 것을 특징으로 하는 국수용 육개장 양념소스의 제조방법. - 청구항 1에 있어서,
상기 알긴산은 알긴산칼륨인 것을 특징으로 하는 국수용 육개장 양념소스의 제조방법. - 물 100 중량부, 데쳐서 절단한 고사리, 토란대 또는 이들의 혼합물 10~20 중량부, 익힌 다진 육 5~15 중량부 및 알긴산을 포함하는 양념 20~30 중량부를 포함하는 국수용 육개장 양념소스.
- 청구항 6에 있어서,
상기 알긴산은 알긴산칼륨인 것을 특징으로 하는 국수용 육개장 양념소스.
