Claims (5)
- a) 2L 증류수와 프락토올리고당 200ml와, 효모균 1ml를 혼합한 후 1차 호기발효를 2시간 내지 24시간 진행하는 단계와;
b) 스피루리나(Spirulina) 세포 건조물을 균질화하고, 스피루리나 건조물에 비해 10배수의 열수를 50 내지 100℃로 가하여 스피루리나 추출물을 제조하는 단계와;
c) 상기 스피루리나(Spirulina) 추출물을 바실러스 서브틸리스와 락토바실러스 플란타럼으로 발효시키는 단계와;
d) 상기 스피루리나(Spirulina) 추출물 100ml와 1차 호기발효액을 혼합하여 2차 혐기 알코올화 발효를 진행하여 단계를 포함하는 스피루리나를 이용한 술 제조방법. - 제 1항에 있어서,
상기 b)과정에서 균질화란 스피루리나 건조물 100g을 2L 증류수와 혼합한 후 호모게나이져(homogenizer)로 500~2,000rpm, 5~20분간 교반한 것을 특징으로 하는 스피루리나를 이용한 술 제조방법. - 제 2항에 있어서,
상기 스피루리나 건조물 100g에 증류수 2L를 혼합한 혼합물중, 3ml을 취하여 30분(process 20초, interval 10초)간 초음파 파쇄하는 파쇄과정이 더 포함될 수 있는 것을 특징으로 하는 스피루리나를 이용한 술 제조방법. - 제 1항에 있어서,
상기 c)과정은 스피루리나 추출액을 700ml씩 분주하여 멸균한 다음 바실러스 서브틸리스와 락토바실러스 플란타럼을 각각 1% 접종하고 37℃ shaking 배양기와 30℃ 배양기에서 24~48시간동안 배양하는 과정인 것을 특징으로 하는 스피루리나를 이용한 술 제조방법. - 제 1항 내지 제 4항중 어느 한 방법에 의해 제조되는 스피루리나를 이용한 술.
