도2는 본 발명에서 사용되는 소형전복의 모습을 나타낸다.
도3은 본 발명에 따른 박리 및 세척 단계의 전복 상태를 나타낸다.
도4는 본 발명에 따른 건조 단계의 전복 상태를 나타낸다.
도5는 본 발명에 따른 급속 동결 단계를 마친 전복을 나타낸다.
도6은 본 발명에 따른 패각(껍데기) 분리 단계를 마친 전복 육부를 나타낸다.
도7은 본 발명에 따라 가공 및 상품화된 전복을 이용한 전복 엑기스 추출액을 나타낸다.

Claims (4)
- 패류 준비 단계(A), 패류의 불순물 제거를 위해 세척한 후, 해수 또는 담수에 패류를 1시간 침지시키는 박리 및 세척 단계(B), 패류 표면의 수분을 털어 내거나 그늘에서 건조시키는 건조 단계(C), 초저온가스에 패류를 완전 침지하여 급속 동결하는 급속 동결 단계(D), 급속 동결된 패류를 건져 1시간 기화시키는 기화 단계(E), 초저온가스를 기화시킨 패류를 해수 또는 담수에 침지하여 상온에서 1시간 완전 해동한 후 패류를 분리하는 해동 및 탈각 단계(F), 탈각된 패류의 패각과 육부를 분리하는 패각(껍데기) 분리 단계(G), 패각에서 분리된 육부를 채반과 마찰시켜 이물질 및 내장을 제거하고 세척하는 세척 및 이물질 제거 단계(H)로 이루어진 것을 특징으로 하는 패류 탈각 가공방법
- -162℃ 이하의 온도를 가진 액체 질소, 액체 산소, 액체 알곤으로부터 선택된 1종의 초저온 가스에 패류를 침지시켜 급속 동결한 후 꺼내어 기화시키는 것을 특징으로 하는 패류 탈각 가공방법
- 제1항 또는 제2항에 있어서 패류는 일매패류 또는 이매패류로부터 선택된 1종인 것을 특징으로 하는 패류 탈각 가공방법
- 제1항 또는 제2항의 방법으로 탈각 생산된 패류 어육
