Claims (6)
- 수비드 조리법에 의한 반려묘 츄르 제조방법으로서,
(a) 닭 가슴살을 식초에 담궈 살균하는 단계;
(b) 진공팩에 눈다랑어, 닭 가슴살, 가츠오분말 및 코코넛 오일을 포함하는 내용물을 담고 밀폐시키는 단계;
(c) 밀폐된 진공팩을 끊는 물에 4초 내지 6초간 담그는 단계;
(d) 상기 밀폐된 진공팩을 60℃ 내지 65℃로 90분간 가열하는 단계;
(e) 상기 내용물과 정제수, 타우린, L-라이신, 비타민c를 투입하고 믹서기로 분쇄하는 단계; 및
(f) 분쇄물에 타피오카 전분을 넣고 분쇄된 반죽을 가열하는 단계를 포함하는 것을 특징으로 하는 반려묘 츄르 제조방법. - 제1항에 있어서,
상기 (f)단계 이후에 가열된 반죽을 식혀서 스틱파우치에 충진하는 단계를 더 포함하는 것을 특징으로 하는 반려묘 츄르 제조방법 - 제1항에 있어서,
상기 타피오카 전분은 전체 분쇄물의 중량대비 3.5wt%인 것을 특징으로 하는 반려묘 츄르 제조방법. - 제1항에 있어서,
상기 (d)단계는 상기 밀폐된 진공팩을 62℃로 90분간 가열하는 단계를 포함하는 것을 특징으로 하는 반려묘 츄르 제조방법. - 제1항에 있어서,
상기 (a)단계는 닭가슴살을 3mm 내지 4mm의 두께로 자른 단계를 포함하는 것을 특징으로 하는 반려묘 츄르 제조방법. - 제1항 내지 제5항 중 어느 한 항의 방법으로 제조된 반려묘 츄르.
