Abstract

La présente invention concerne un procédé pour accélérer le vieillissement des rhizomes d'iris (iris), et pour la production de beurre d'iris à partir des rhizomes vieillis. Le procédé selon l'invention comprend le stockage des rhizomes d'iris dans une atmosphère d'oxygène ayant une pression partielle d'oxygène de 0,5 bar ou plus à 25 ° c, et une température élevée.
