Abstract
Procédé de préparation d'une composition comprenant des protéines hydrolysées à partir de matière première d'origine animale dans lequel le produit obtenu est une composition liquide comprenant des protéines hydrolysées, ayant une solubilité supérieure à 80% et dans laquelle au moins 90% de la fraction soluble de ladite composition sont des protéines avec un poids moléculaire inférieur à 10 000 daltons.
