Abstract

L'invention concerne un procédé de torréfaction de café aromatisé au cannabis, utilisant de la cendre de charbon de bois comme support thermique. Le procédé comprend plusieurs étapes : la préparation de la cendre de charbon de bois par combustion à haute température (600-700°C) pour obtenir une texture fine, le prétraitement des grains de café par séchage à 100°C, puis la torréfaction des grains en présence de cannabis broyé et tamisé. Le cannabis est utilisé sous forme dun élément spécifique de la plante (feuilles, fleurs ou tiges) ou de la plante entière, et appliqué à une granulométrie inférieure à 1 mm pour maximiser la diffusion des arômes. La torréfaction principale est effectuée à 350°C pendant 10 minutes, suivie dune phase de développement aromatique à 250°C pendant 5 minutes. Ce procédé innovant permet dobtenir un café aux arômes distinctifs de cannabis et de notes boisées, grâce à linteraction entre les composés volatils du cannabis et les grains de café pendant la torréfaction. Le produit final est ensuite refroidi et tamisé pour garantir la qualité et la pureté des grains.
