Abstract

The invention relates to the food industry, namely to a process for concentration of liquid foodstuffs in continuous flow.The process, according to the invention, includes feeding of the liquid foodstuff, feeding of the liquid carbonic acid gas through the nozzle of an ejection apparatus with obtaining of a two-phase flow from granules and carbonic acid gas vapors, interaction of the foodstuff with the two-phase flow, separation of the concentrated product from the carbonic acid gas granules covered with ice. At the same time, the product is fed in the place of minimum section of a Laval nozzle, installed between the inlet chamber and the mixing chamber of the ejection apparatus, where its interaction with the two-phase flow of the carbonic acid gas takes place.
