Abstract

Invenţia se referă la industria produselor lactate, şi anume la un procedeu de procesare a zerului.Procedeul de procesare a zerului include colectarea zerului, răcirea până la temperatura de 5…10°C, electroactivarea zerului în celula catodică a unui electrolizor cu diafragmă cu debitarea unei părţi a acestuia în celula anodică la o densitate a curentului de 10,0…20,0 mA/cm2, separarea spumei de zerul deproteinizat ce conţine lactoză şi lactuloză, după care din spumă se separă concentratul proteico-mineral, totodată electroactivarea zerului se efectuează la temperatura de 5…50°C.Rezultatul constă în obţinerea unui produs proteic cu un conţinut bogat de substanţe minerale şi a unui produs ce conţine lactoză şi lactuloză.
