The yeast strain Saccharomyces wines, stored in the National Collection of Non-Organic Microorganisms with the CNMN-Y-26 number, can be used in the production of dry white wines. The result consists in selecting a strain of autochthonous yeasts capable of fermenting carbohydrates at low temperatures with high quality wine.
