Abstract

La presente invención se refiere a una composición que comprende: un ingrediente sensible; y caracterizada porque el ingrediente sensible está dentro de un revestimiento protector que comprende una matriz de quitosana. Adicionalmente, la presente invención se refiere a métodos para estabilizar un ingrediente sensible. Más específicamente a un método estabilizador que comprende los pasos de: preparar una mezcla de un alginato de metal alcalino; añadir un ingrediente sensible a esa mezcla; crear una corriente de esa mezcla que comprende el ingrediente sensible; cortar esa corriente para formar una esfera; dejar caer la esfera en una fuente de quitosana; formar una esfera del ingrediente sensible recubierta dentro de un revestimiento protector que comprende un alginato de quitosana.
