Abstract

Se proporcionan composiciones nutricionales con niveles de sodio seleccionados para niños jóvenes (por ejemplo, edades de 1-4 años). En una modalidad general, la presente invención proporciona composiciones nutricionales que tienen un nivel seleccionado de sodio, hechas a partir de alimentos sanos que proporcionan macronutrientes y micronutrientes necesarios en la dieta diaria de un niño y que son adecuados en el desarrollo para este grupo de edades. Los niveles de sodio de las composiciones nutricionales pueden ser menores que o iguales a alrededor de 200 mg por 100 g de composición nutricional. Se proporcionan también métodos para elaborar composiciones nutricionales con niveles de sodio seleccionados mientras se logran también sabores de producto aceptables a niveles tanto piloto como de fábrica. Los métodos de procesamiento por lotes pueden incluir añadir una suspensión de hielo, agua fría y KCl a un producto procesado por lotes después de una etapa de enfriamiento inicial y antes del envasado.
