Abstract

La invención se refiere a un procedimiento para la extracción de colágeno a partir de piel de tilapia por medio de una hidrólisis enzimática. La descripción abarca desde la recepción de la materia prima, que en este caso es la piel de tilapia, hasta finalmente la extracción de colágeno. Dicha extracción se realiza gracias a la hidrólisis de la piel, llevada a cabo por la enzima proteasa Bacillus subtilis donde esta degrada todas las proteínas que no corresponden al colágeno. Como resultado se obtiene un colágeno sólido, insoluble en agua, de textura suave y color blanquecino; el cual tiene aplicación industrial cosmética, farmacéutica, alimenticia, además del campo de los materiales biomédicos y biomateriales.
