Abstract
La presente invención se refiere a un método para preparar un concentrado de cerveza o de sidra que comprende alcohol y componentes saborizantes volátiles de cerveza o sidra, y además cerveza o sidra preparadas a partir de estos. En particular, la invención se refiere a un método de concentración en dos etapas en donde la primera etapa implica una nanofiltración de alto rendimiento que da como resultado un retenido altamente concentrado y una fracción acuosa de permeado que comprende alcohol y componentes saborizantes volátiles y en donde la segunda etapa implica eliminar el agua de dicha fracción de permeado para obtener una solución altamente concentrada de alcohol que comprende además los componentes saborizantes volátiles, la cual se combina después con el retenido de la primera etapa hasta un concentrado final de cerveza o de sidra de alto contenido de manera que alcohol y sabor.
