COCOA BEANS ARE DRIED AND/OR FERMENTED IN APPARATUS COMPRISING A HOLLOW ROTARY DRUM (1) FOR RECEIVING A QUANTITY OF BEANS AND HAVING A PLURALITY OF PERFORATED TUBES (7) WHICH EXTEND AXIALLY THERETHROUGH. HEATED AIR IS BLOWN THROUGH THE TUBES (7) AS THE DRUM (1) ROTATES, THE TUBES ALSO SERVING TO AGITATE THE BEANS. THE HEATED AIR MAY BE RECIRCULATED TO THE TUBES FROM THE DRUM. (FIG 5)
