Abstract
A METHOD FOR PREPARATION OF MODIFIED FATS AND OILS WHICH COMPRISES PROCESSING FATS AND OILS IN SYSTEM OF WATER CONCENTRATION OF 300 PPM OR LESS USING AS A CATALYST AN IMMOBILIZED LIPASE OBTAINED BY IMMOBILIZING A LIPASE ON AN IMMOBILIZING CARRIER IN THE PRESENCE OF AN ACTIVATING AGENT TO CONDUCT AN ESTER SYNTHETIC REACTION AND/OR ESTER INTERCHANGE REACTION, AND AN IMMOBILIZED LIPASE OBTAINED BY IMMOBILIZING LIPASE ON AN IMMOBILIZING CARRIER IN THE PRESENCE OF AN ACTIVATING AGENT SELECTED FROM POLYOL COMPOUNDS. BY USING THE IMMOBILIZED LIPASE, MODIFIED FATS AND OILS MAY BE OBTAINED WITH LOW COST SINCE SHORTENING OF REACTION TIME FOR ESTER SYNTHESIS AND BIOREACTORIZATION ARE MADE TO BE POSSIBLE. RESULTING MODIFIED FATS AND OILS HAVE EXCELLENT QUALITIES THAT THEY ARE HIGH IN CRYSTALLIZATION SPEED AND HARD TO BE HYDROLIZED, OWING TO LOW CONTENTS OF MONOGLYCERIDE, DIGLYCERIDE AND FATTY ACIDS.
