Abstract
A PROCESS FOR PRODUCING A CONFECTIONARY FAT AND OIL COMPOSITION COMPRISES THE STEPS OF CARRYING OUT THE TRANSESTERIFICATION OF A PALM OLEIN, WHICH HAS AN IODINE VALUE OF NOT LOWER THAN 60, BY USING A LIPASE AS A CATALYST, AND REMOVING A DISATURATED MONOUNSATURATED TRIGLYCERIDE AND A TRIASATURATED TRIGLYCERIDE, WHICH ARE FORMED BY THE TRANSESTERIFICATION, A FRACTIONATD PALM OLEIN BEING THEREBY OBTAINED. THE FRACTIONATED PALM OLEIN OR A MIXTURE OF THE FRACTIONATED PALM OLEIN AND A DIFFERENT LIQUID OIL IS THEN SUBJECTED TO THE ISOMERIZATION HYDROGENATION.
