Abstract
A method for producing a manganese-rich yeast extract, which involves an extraction step of suspending manganese-containing yeast in a solution containing a carboxylic acid and/or a carboxylate and then separating the resultant suspension into a solid component and a liquid component; a manganese-rich yeast extract; a food; a composition for a culture medium for an edible lactobacillus; a culture medium for an edible lactobacillus; and a method for culturing an edible lactobacillus.
