Abstract

An object of the present invention is to provide chocolate with a soft texture and excellent melting in the mouth, taking advantages of the properties of oil and fat. In particular, by being baked, the novel chocolate has a crispy and soft texture and excellent melting in the mouth. According to the chocolate of the present invention, the oils and fats contained in the chocolate contain 30 to 73 mass% of palm kernel fractionated soft oil with an iodine value of 21 to 29 and has a solid fat content of 5% or less at 35?C.
