Abstract

A rolling assembly converts dough into an elongated round supply for e.g. French bread. The roller (6) has a lower frame (8) over which moves a lower belt (10). The base frame has an upper support frame (17) with a swivel frame (23) and upper belt (22), and a dough bed swing-press (39) with overlapping action. The support frame (17) is height-adjustable with respect to the bottom frame using a cam. The swing frame (23) and upper belt (22) has a weight-compensating gas spring (28). The pressure bed (39) is weight compensated by a gas spring (41). The gas springs (28, 41) pivot on the support frame (17). The swing frame (23), upper belt (22) and pressure bed unit (39) can be locked in the work position. The lifting gear may be operated by pneumatic, hydraulic or electrical action. The arrangement allows for use of either the upper roller or the pressure bed as required.
