En fremgangsmåte for å redusere akrylamid i matvarer, matvarer med reduserte akrylamidnivåer og en kommersiell vare. I et aspekt omfatter fremgangsmåten å redusere asparagirmivået i et matmateriale før endelig oppvarming (for eksempel koking). I et annet aspekt omfatter fremgangsmåten å tilsette et enzym i stand til å hydrolysere amidgruppen i fiitt asparagin til matmaterialet.
