Abstract

Det beskrives en fremgangsmåte for fremstilling av et stivelsesholdig produkt i partikkelform. Videre beskrives det oppnådde produktet samt anvendelse av dette. Utgangsmaterialet omfatter et materiale som irmeholder stivelsesgranuler og lipider som fettholdig havremel eller havrelignende stivelse, separert fiia kom. Materialet fliktes, energi tilføres hvorved stivelsesgranulene delvis skades for å fii amylose og amylopektin, hvoretter den oppnådde, plastiske masse tørkes og til slutt disintegreres, for eksempel ved oppmaling for å gi produktpartikler. Stivelsesgranulene kan skades ved hjelp av en ekstmder eUer en ekspander. Prosessen kan være granulering av havremel eller et armet stivelsesholdig mel. Fett kan settes til materialet som prosesseres og vU bindes til den skadede stivelse. Det oppnådde produkt firmer særlig anvendelse i næringsstoffer som bakeriprodukter.
