Abstract
Foreliggende oppfinnelse angår ny gjær. Nærmere bestemt en ny gjær som er anriket for Vitamin D. I ett aspekt omfatter oppfinnelsen en gjær som beholder sin evne til å utvikle gass etter UV-bestråling og som kan anvendes ved fremstilling av brød og andre bakte produkter med signifikante nivåer av vitamin D, spesielt vitamin D2. Oppfinnelsen angår også en fremgangsmåte for fremstilling av en ny D2-anriket gjær så vel som fremgangsmåter for anvendelse av den nye gjæren ifølge oppfinnelsen.
