Abstract
Oppfinnelsen vedrorer forbedringer ved mel, samt "pasta" (spaghetti-, makaroni-, nuddel- og lignende produkter samt deig for slike produkter) fremstilt av melet, hvor melet fremstilles ved oppmaling av korn og belgfrukter tidligere forbehandlet i nærvær av et reduksjonsmiddel. Reduksjonsmid- let kan være for eksempel natriummetabisulfit, organiske syrer, SO7, cystein, tioglykolsyre, glutation eller hydro- gensulfid. Tilstedeværelsen av reduksjonsmidlet i forbehand- lingsopplosningen resulterer i en forbedring med hensyn til det resulterende melets bibehold av farge, og gir anledning til at det grove mel og klien skilles fra semulen og males °PP igjen for å skaffe tilveie mel med akseptabel farge og kvalitet for anvendelse i produksjon av makaroni etc.
