Abstract
Oppfinnelse vedrører bruk av melkesyrebakterier i fremstillingen av en krem som skal være helt eller delvis overtrukket med iskrem. Iskremen er kjennetegnet ved at den inne- holder et dekke og frossen krem, som på hele eller deler av den ytre overflate har et ikke-dekkende overtrekk, nevnte overtrekk inneholder l O3 til l O9 CFU av melkesyre- bakterier. Fortrinnsvis inneholder den dekkede kremen mer enn 10 CFU/g melkesyre- bakterier, forholdet (e/g) mellom antallet melkesyrebakterier i overtrekket (e) og antallet melkesyrebakterier i kremdekket (g) er større enn 1. Overtrekket kan inneholde 1% til 70% melk fermentert ved melkesyrebakterier, 0,5% til 5% animalsk eller vegetabilske proteiner, et melkesyrefettinnhold på 2% til 20%, og fortrinnsvis Lactobacillius acido- philus CNCM - I-1225-stamme.
