Abstract
With this invention, we propose to use the skin of plantain, cassava, potato, sweet potato to extract starch. Thus, a process is proposed for extracting starch obtained from fresh skins or peels, which will be dried and then ground to obtain flour. From this flour, starch will be obtained by going through the stages of soaking, homogenization, filtration, sedimentation and finally drying of the product obtained. Subsequently, this product will undergo a treatment to obtain a clearer starch. This starch can be used for the production of bio-packaging.
Description
The present invention relates to a process for extracting starch from plantain biomass. Until now, this biomass has been mainly considered waste and is therefore released into the environment, creating pollution. This starch will be used to manufacture bio-packaging for the protection of cereals and legumes, intended for human and animal consumption, against insect pests.
Plantain biomass contains, in addition to starch, cellulose and lignin which can be used as reinforcement in the formulation of bio-packaging.
The action of insects that prey on cereals and legumes can completely destroy food and seed stocks in just a few months if no protection is applied. These insects cause significant damage by boring holes into the grains, resulting in weight losses of between 10% and 75%, or even more.
Unused biomass is a potential source of new high-value products, which can also contribute to soil enrichment after processing. The potential uses of starch are also countless, both in food and in the textile and fine chemicals industries.
The work that has been carried out on starch extraction concerns raw materials such as cereals (corn, etc.), tubers (cassava, potato, banana pulp, etc.), and legumes.
This is the case of Bergthaller et al. (1999). who worked on an artisanal extraction process, where the potatoes are peeled and grated by hand in a basin. After adding water, the flesh is washed well. The washing liquid is collected and left to stand after adding lemon juice to whiten the preparation. Little by little the starch settles at the bottom of the container. The majority of the water is then removed, taking care to preserve the starch. The operation is repeated until a very white starch is obtained: addition of water and lemon juice, mixing and decanting, removal of the supernatant. The starch is then placed on a clean cloth and dried in the sun. The dried starch is ground until a powder is obtained and then stored in jars away from humidity.
Corn grains are immersed in water (soaking at 48-50°C, 30-50 h). During this soaking, an SO2 solution is added to inhibit the activity of enzymes and microorganisms. After swelling the corn grains in water, they are coarsely ground and the fatty germs are separated. Finer grinding is then carried out to separate the skins and fibers that produce the fodder. Finally, the proteins are separated by sieving. The water is removed by centrifugation and the starch is concentrated, refined and dried.
Extraction is always carried out from flour. The flour is first thoroughly mixed with water in mixers. Then, it is leached by sieving. The separation yields gluten and starch depending on the sieve mesh. The separation of gluten and starch can also be carried out in a three-phase decanter. The starch obtained is further refined and drained before drying. Two starch populations with different granule sizes are extracted: small (< 10 µm, type B) and large (15 µm - 45 µm, type A).
More recent starch extraction processes use equipment to optimize starch yield. This is the case, for example, of Canadian patent CA2442940C, which extracts dry pea starch from pea flour using at least one of the pieces of equipment in a potato starch factory, consisting of hydrocyclones, decanter centrifuges, and sieves, without first performing a step to separate the internal fibers of the pea. This is also the case of American patent US20I.30042860A, which isolates banana starch from green banana pulp mixed with a sodium bisulfite solution and water.
It is clear that most of these processes use reagents in addition to water to extract starch. Furthermore, existing processes extract starch from the food itself and not from food waste. There is almost no work on starch extracted from biomass, particularly from the skin of plantain, potato, sweet potato, or cassava. Most conventional processes for extracting components from plantain biomass target fibers. This is the case of Cameroonian patent number 1202000189, which proposes the extraction of fibers from the pseudo-stem of the banana tree for the production of paper.
The present invention relates to a process for extracting starch from plantain, potato, sweet potato and cassava skin, consisting of the following 3 steps. In the first step of the process, the cleaned and cut skin is oven-dried between 35°C and 60°C, then ground and suspended in water at room temperature. It is advantageously chosen to suspend in water a flour having a particle size between 50 μm and 100 μm. The size of the solution is not a limiting factor, but it is advantageously chosen to work in a range of pI between 6 and 7. In the second step of the process, it is advantageously chosen to directly subject the aqueous suspension 65 obtained in the first step to decantation between 24 and 48 hours at room temperature. Decantation will allow easy separation into two distinct fractions, starch on the one hand, and solubles on the other. In the third step, the starch obtained in the previous step, once separated from the supernatant, is dried in an oven between 30°C and 35°C for a period of 24 to 48 hours. The starch obtained is then stored in a plastic bag, then treated with citric acid, hydrogen peroxide and lemon.
The invention is exceptionally suitable for a starch extraction process application. The invention will now be illustrated in more detail by an example of implementation, in no way intended to limit said invention in its scope and spirit.
Exemple :Example :
La farine obtenue est ensuite tamisée et on obtient une poudre.10.8 kg of plantain skins are washed with 25 liters of water to remove dirt, they are then cut lengthwise and then widthwise using a knife. The pieces of plantain skins are dried in an oven at a temperature of 35 - 45 C for 24 - 48 hours. After the drying operation, the pieces of plantain skins are ground. The flour obtained is then sieved and a powder is obtained.
This powder is soaked in 10 L of distilled water and after mixing the starch milk is left to settle in the open air for 24 - 48 hours to maximize extraction. The starch deposit obtained is then dried at 30 -35 C for 24-48 hours to remove the water contained in it. The starch obtained is then stored in a plastic bag, then treated with citric acid, hydrogen peroxide and lemon.
The starch prepared by the process according to the invention has a pH value of between 5 and 7 and an average particle size of 32.42 ± 1.72 pm with a starch yield of between 15% and 16%.
