Abstract

A process of producing sugar more particularly to a cheaper alternative powdered sugar from sweet potato (Ipomoea batatas L.) comprising the steps of: preparing and measuring of the ingredients such as sweet potato, water and maltodextrin; cleaning and sanitizing the sweet potato to remove the soil; peeling the sweet potato and washing it with running water to hydrolyze the starch; grating the sweet potato to properly extract the juice from the meat; the mixture of grated sweet potato and water was extracted using an extracting machine; straining using a cheesecloth to strain the starch; measuring of the total soluble solids to help determine the yield when spray drying; blending of slurry and maltodextrin, wherein maltodextrin was used as a carrier of the sweet potato; spray drying to transform the liquids to powder form; measuring of brix to help determine the sugar percentage by mass of solids; blending of mixture to ensure uniformity of granules and taste and; packing and labelling the product.
