Abstract
The present utility model relates to a process of production of a pasta formulation with improved flavor and nutritional value through the addition of chili leaves. The process for the production of chili leaves pasta comprises the steps of drying the chili leaves; pulverizing the dried chili leaves; mixing flour, salt, and the powdered chili leaves; adding eggs to the flour, salt and chili leaves mixture to produce dough; kneading the dough for 8 to 10 minutes and until it is smooth and elastic; letting the dough rest for 15 to 20 minutes; dividing the dough into 4 partitions and using each partition separately; and rolling or flattening the dough and passing it through machine rollers until smooth to produce pasta. The amounts used are 240 grams of chili leaves and flour combined, 3 eggs, ½ teaspoon of salt, and ½ teaspoon of vegetable oil.
