Abstract

This utility model relates to food production more particularly to a process of producing quail (Coturnix coturnix japonica) meat patties comprising the following steps: (a) washing of quail meat, (b) mashing with lemon grass and chopped garlic, (c) grinding the mashed quail meat; set aside (d) weighing of different ingredients for seasoning: flour, lemon grass; salt, fine pepper, eggs, sugar, parsley, soy sauce, shredded carrots and shredded potato, (e) combining the mashed quail meat in a large bowl and other ingredients for seasoning, (f) adding alternately the shredded potato and flour in the mixture in step e, (g) mixing thoroughly the mixture in step f until well blended, (h) molding the mixture into circular shaped patties into desired size, (i) packing the shaped patties in polyethylene plastic and (j) storing the patties and keeping it frozen for a longer shelf-life.
