Abstract
The present technology relates to processed meat products more particularly to bacon with pandan (Pandanus amaryllifolius) and lemongrass (Andropogon fragrans). The pandan (Pandanus amaryllifolius) and lemongrass (Andropogon fragrans) bacon is made by first trimming the skin from the pork belly slab, then curing it with chopped lemongrass, pandan, honey, molasses, salt, sugar, black pepper, and cayenne pepper, annatto seed for 10 days, then smoking the bacon before slicing into strips and packing for sale or consumption.
