Description

Przedmiotem wynalazku jest sposób wytwarzania mlecznych napojów fermentowanych o wysokiej trwalosci.Znane metody wytwarzania mlecznych napojów fermentowanych polegaja na zaprawieniu pasteryzowanego mleka zakwasem czystych kultur mezofilnych lub termofilnych bakterii mleko¬ wych, jego ukwaszeniu w odpowiedniej temperaturze, a nastepnie schlodzeniu. Ukwaszanie moze odbywac sie w opakowaniach jednostkowych (metoda termostatowa) lub w duzych pojemnikach (metoda tankowa). W metodzie tankowej ukwaszony produkt jest rozlewany po schlodzeniu do opakowan jednostkowych.W czasie ukwaszania nastepuje namnazanie sie glównie mikroflory technicznej wprowadzonej do pasteryzowanego mleka w formie zakwasu. Oprócz tej mikroflory namnaza sie takze mikroflora szkodliwa, wystepujaca w mleku po pasteryzacji,jak równiez przenikajaca do mleka ze srodowiska zewnetrznego. Z tego wzgledu napoje wytwarzane tym sposobem charakteryzuja sie czesto wyso¬ kim stopniem zakazenia bekteriami niemlekowymi. Mikroflora szkodliwa, a takze zbyt silnie namnozona mikroflora techniczna powoduja niska trwalosc mlecznych napojów fermentowanych.W celu przedluzenia trwalosci mlecznych napojów fermentowanych stosuje sie niekiedy ich pasteryzacje. Pasteryzacja wymaga jednak stosowania dodatku substancji obcych tzw. stabilizato¬ rów przeciwdzialajacych niszczeniu typowej struktury i konsystencji. In addition to this microflora, the harmful microflora, present in milk after pasteurization, and penetrating into the milk from the outside environment, also multiplies. For this reason, beverages produced by this method are often characterized by a high degree of contamination with non-lactic acid bacteria. Harmful microflora, as well as excessively multiplied technical microflora cause low shelf life of fermented milk beverages. In order to extend the shelf life of fermented milk beverages, pasteurization is sometimes used. However, pasteurization requires the addition of foreign substances, the so-called stabilizers to counteract the deterioration of typical structure and consistency. However, it increases the production cost and sometimes worsens the taste and aroma properties of beverages. According to the invention, there is no method according to the invention that allows for complete destruction of harmful microflora, and, depending on the requirements, partial or complete destruction of technical microflora in the pasteurization process without the use of stabilizers. The method according to the invention consists in that 1 / 2-2 / 3 parts of pasteurized milk or a pasteurized mixture of milk and rennet whey in a proportion of 2: 3 are seasoned with acid from pure cultures of thermophilic lactic acid bacteria and acidified at a temperature of 40-50 ° C to acidity pH 3-4, preferably pH 3.7.
