Description
Przedmiot wynalazku i dziedzina techniki. Przedmiotem wynalazku jest wyrób spożywczy w postaci farszu rybno-warzywnego oraz sposób wytwarzania wyrobu spożywczego w postaci farszu rybno-warzywnego. Polska norma (PN-A-86770:1999 „Ryby i przetwory rybne. Terminologia”) określa farsz jako mięso ryb rozdrobnione w urządzeniu do oddzielania mięsa od kości i skóry lub przez kutrowanie, z udziałem lub bez dozwolonych substancji dodatkowych. Natomiast według określenia zawartego w książce E. Kołakowskiego „Technologia farszów rybnych”, (PWN, Warszawa, 1986 r.), farsz rybny jest to rozdrobnione mięso, oddzielone w sposób mechaniczny od niejadalnych części ryb, poddane dodatkowym zabiegom technologicznym przedłużającym jego trwałość, uformowanie w bloki i zamrożone zgodnie z obowiązującymi wymaganiami. Operacja kutrowania polega na rozdrabnianiu surowca, półprzetworu lub przetworu w kutrze masarskim na cząstki o wymiarach nie większych niż kilka milimetrów. Głównym składnikiem farszu są mięśnie szkieletowe tułowia, ogona oraz płetw ryb. The Polish standard (PN-A-86770: 1999 "Fish and fish products. W tym kontekście brak jest informacji oraz doniesień naukowych o wykorzystaniu do produkcji farszu surowych śledzi i szprotów bałtyckich o obniżonej przydatności technologicznej, które nie kwalifikują się do wytwarzania tradycyjnych przetworów w postaci ryb całych, tusz lub filetów, jak konserwy, ryby wędzone, solone i marynowane. Śledzie i szproty bałtyckie należą do podstawowych surowców stosowanych w krajowym przetwórstwie rybnym. They are valuable raw materials, especially as a source of natural, essential in the diet of people n-3 polyunsaturated fatty acids. The quality and technological suitability of Baltic herring and sprat largely depends on the fat content, which is subject to seasonal changes in the life cycle of these fish. The last decade has seen a drastic decrease in fat content in the meat of herring and Baltic sprat. In the past, during the September-December fishing season, herring fat content reached 15%, while in recent years the fat content in their meat occasionally exceeds 5%. Weakly muscled herring and sprats with a low fat content, less than 2% in the muscle tissue, are sent to processing plants, which reduces the nutritional value and quality of products obtained from them. In terms of morphometric parameters, the sprat and Baltic herring are among the pelagic fish of small sizes and low individual weight, the tissue of which, due to the high water content, is delicate, not cohesive and disintegrates due to heat treatment or freezing. In order to fully use the Baltic fish for the production of food products, a method of processing Baltic herring and sprat with reduced technological suitability was developed due to the low fat content, inadequate morphometric parameters of fish and mechanical damage, consisting in the use of all parts of gutted herring or headless carcasses and thawed from sprats for the production of fish and vegetable stuffing intended for the production of molded products, such as frozen culinary semi-finished products, for example breaded burgers, fish fingers, and preserves such as meatballs, meatballs in sauce, where the physical integrity of the fish tissue does not play a significant role. For the production of fish and vegetable stuffing, shredded Baltic herring or sprat carcasses are used, containing all the nutrients present in them, including protein, fat, macro- and microelements. In the above-mentioned method, in order to increase the nutritional value, rheological properties and sensory quality of products formed from fish and vegetable stuffing based on Baltic herring and sprat, the addition of ground salmon meat, a mixture of vegetables, permitted auxiliary substances and spices is used. The fish and vegetable stuffing prepared as described above is then processed into canned meatballs in tomato sauce in the traditional way, in the following processes: manual or mechanical forming of 50 g meatballs, packing the meatballs into appropriate packages and adding tomato sauce, hermetic closure of the packages , heat sterilization at a temperature above 100 ° C, most preferably in the range from 115 ° C to 118 ° C, to a sterilization value F0 = 7: 7.5.
