Wynalazek dotyczy sposobu wytwarzania produktu fermentacji z zawierajacego cukier hydrolizatu. Sposób obejmuje fermentacje hydrolizatu cukrowego w ukladzie fermentacyjnym z zastosowaniem drozdzy z wytworzeniem brzeczki fermentacyjnej zawierajacej produkt fermentacji; wprowadzenie kwasu i dwutlenku chloru, do ukladu fermentacyjnego, tak aby w jednym lub wiecej etapach poddac zanieczyszczenia mikrobiologiczne w ukladzie fermentacyjnym dzialaniu dwutlenku chloru przy wartosci pH nizszej niz 3,0; oraz odzyskiwania produktu fermentacji.
