Sposób wytwarzania strukturyzowanych triacylogliceroli polega na reakcji acydolizy oleju rzepakowego z kwasem stearynowym katalizowanej lipazą, przy stosunku molowym oleju do kwasu od 1:3 do 1:4, w obecności preparatu lipaz w postaci odwodnionej grzybni selektanta pleśni Mucor racemosus A27/3sTAG, w środowisku eteru naftowego, w temperaturze 40°C, w czasie 30-50 godzin. W odmianie wynalazku sposób wytwarzania strukturyzowanych triacylogliceroli polega na reakcji acydolizy oleju rzepakowego, sojowego lub słonecznikowego z kwasem stearynowym lub palmitynowym, przy stosunku molowym oleju do kwasu od 1:5 do 1:6, w środowisku eteru naftowego w obecności preparatu lipaz w postaci odwodnionej grzybni selektanta pleśni Mucor racemosus A27/3sTAG immobilizowanej w porach pianki poliuretanowej wypełniającej ciągły reaktor kolumnowy, przy czym przez reaktor najpierw przepuszcza się eter naftowy, a następnie mieszaninę oleju i kwasu w eterze naftowym z szybkością zapewniającą przebywanie substratów w reaktorze przez 21-30 godzin w temperaturze 35°C. The preparation of lipases in batch processes can be used several dozen times, while in continuous processes carried out in column reactors, it retains catalytic activity for more than 1 year. After inactivation, this preparation is easily biodegradable in the soil or compost environment.
