Sposób wytwarzania strukturyzowanych triacylogliceroli polega na reakcji acydolizy oleju rzepakowego, słonecznikowego lub sojowego z kwasem palmitynowym lub stearynowym przy stosunku molowym oleju roślinnego i kwasu tłuszczowego od 1:3 do 1:4, w obecności preparatu lipaz w postaci odwodnionej grzybni selektanta pleśni Mucor racemosus A27/3sTAG, w środowisku eteru naftowego, przy użyciu promieniowania mikrofalowego o mocy 750 W włączanego co 20 sekund na okres 20 sekund przy temperaturze mieszaniny reakcyjnej nie przekraczającej 50°C. Sposobem tym otrzymuje się strukturyzowane triacyloglicerole z wydajnością 69-78% (mierzoną metodą GC i liczoną w stosunku do ilości użytego oleju), w czasie kilkadziesiąt razy krótszym w porównaniu z czasem prowadzenia acydolizy oleju z kwasem przy użyciu tradycyjnego ogrzewania przeponowego.The method of producing structured triacylglycerols is based on the reaction of acidolysis of rapeseed, sunflower or soybean oil with palmitic or stearic acid at a molar ratio of vegetable oil and fatty acid from 1: 3 to 1: 4, in the presence of a lipase preparation in the form of dehydrated mycelium Mucor racemosus A27 / 3sTAG, in a petroleum ether environment, using 750 W microwave radiation switched on every 20 seconds for a period of 20 seconds at a reaction temperature not exceeding 50 ° C.
