Wynalazek dotyczy nowego hydroksylaktonu 2-hydroksy-5-metylo-9-oksabi-cyklo[4.3.0]nonan-8-onu, o wzorze 2, oraz sposobu jego otrzymywania na drodze transformacji mikrobiologicznej 2-jodo-5-metylo-9-oksabicyklo[4.3.0]nonan-8-onu, o wzorze 1, za pomocą systemu enzymatycznego szczepu grzyba Fusarium scirpi AM 199. Związek o wzorze 2 wykazuje aktywność antymikrobiologiczną polegającą na hamowaniu wzrostu mikroorganizmów: bakterii: Micrococcus flavus C1, Bacillus cereus C3, drożdży: Saccharomyces cerevisiae SV30, Schizosaccharomyces pombe C-1, Rhodotorula rubra C-9 oraz grzybów strzępkowych: Penicillium sp., Alternaria sp. i może znaleźć zastosowanie w przemyśle spożywczym do ochrony produktów żywnościowych.The invention relates to a new 2-hydroxy-5-methyl-9-oxabicyclo [4.3.0] nonan-8-one hydroxylactone, of formula 2, and a method for its preparation by microbial transformation of 2-iodo-5-methyl-9- oxabicyclo [4.3.0] nonan-8-one, of formula 1, using the enzyme system of the fungus strain Fusarium scirpi AM 199. The compound of formula 2 exhibits antimicrobial activity consisting in inhibiting the growth of microorganisms: bacteria: Micrococcus flavus C1, Bacillus cereus C3, yeast: Saccharomyces cerevisiae SV30, Schizosaccharomyces pombe C-1, Rhodotorula rubra C-9 and filamentous fungi: Penicillium sp., Alternaria sp. and can be used in the food industry to protect food products.
