Abstract
Przedmiotem zgłoszenia jest zastosowanie formulacji kurkuminoidów jako dodatku technologicznego wydłużającego trwałość fermentowanych produktów nabiałowych, jako środka o działaniu przeciwdrobnoustrojowym wobec mikroorganizmów patogennych i jednocześnie stymulującego wzrost mikroorganizmów probiotycznych w nabiałowych produktach fermentowanych, jako środka poprawiającego właściwości organoleptyczno-smakowe fermentowanego produktu nabiałowego, sposób wydłużania trwałości fermentowanego produktu nabiałowego oraz fermentowany produkt nabiałowego o przedłużonej trwałości wytworzony tym sposobem. Zgłoszenia umożliwia wytwarzanie probiotyczno-nutraceutycznych produktów nabiałowych o przedłużonej trwałości i przydatności do spożycia, zawierających żywe probiotyczne szczepy mikroorganizmów i kurkuminoidy.
