Abstract

The fruit salad is made by (a) washing the fruit; (b) peeling and cutting into pieces; (c) immediate immersion in aq. solns. of citric acid, ascorbic acid (Vitamin C), and calcium chloride and tetrasodium pyrophosphate, in concns. of 0.1-2% for 10-40 mins.; (d) mixing with an aq. syrup contg. 15-25% saccharose and small amounts (0.05-0.15%) ascorbic acid, citric acid and calcium chloride; (e) packaging in plastics at glass containers; and (f) refrigerating at 4 deg.C.
